Lauren Talbot Gillan, CN | Certified Nutritionist

Once upon a time, I had a skewed perception of "health."

To me, “health” meant “thin”— aka: meticulously counting calories, avoiding the chips and guacamole, and tirelessly working out to offset any dietary indulgences.

I wanted to be a double zero and I didn’t fully comprehend (or care) how my choices would impact my overall well-being, as long as I was “thin enough.”

My journey took an unexpected turn while juggling business school and modeling in Los Angeles.

At 20, I had managed to maintain a low-calorie, low-fat diet— sure, but ultimately at the price of my general health—

I suffered from depression, anxiety, skin issues, digestive problems, and I felt incredibly ALONE.

My mood swung dramatically (from sad to very sad, to irritable, or anxious), my hormones clearly were not in balance, and my skin rebelled even more.

I felt a loss of control, but even more so… I felt defeated.

At my lowest point, a small miracle happened— I stumbled upon a book that would fundamentally reshape my understanding of nutrition and well-being. It illuminated the concept of nourishing the body with "real food" and supporting its natural detoxification channels and digestive system. With nothing to lose, I set aside my fears of weight gain and embraced this new approach.

To my amazement, the transformation was incredible. Real food nourished me in ways my previous diet never could. Within a week, my digestion improved dramatically, my energy levels balanced, and I noticed a positive shift in my physique—all without the need for fiber cereal, or restrictive eating habits.

I was eating more than ever.

At the age of 21, after graduating from USC with a degree in business, I embarked on a new journey, studying under the book’s author, I attained my certification as a holistic nutritionist, equipped with the knowledge and passion to help others navigate their own paths to wellness.

Today, I work intimately with clients who are ready to embrace the transformative power of holistic nutrition.

I meet them wherever they may be in their journey, offering the flexible tools and support they need to reclaim their health and vitality.
