Nutrition for the People

Your step-by-step guide to nourishing your body, reducing inflammation, and building sustainable habits for lasting energy and wellness.

Meet your instructor, Lauren Gillan, CN

After more than a decade in private practice, I realized that so many people were struggling with the same concerns and receiving conflicting information from mainstream media and traditional healthcare providers that did not address the root of their issues.

I created this online course because I wanted to make my approach accessible to more people. Not everyone can afford ongoing 1:1 nutritional support—but that doesn’t mean they should be left out.

This course is the product of over 15 years of real conversations with clients. In fact, I designed it to be as close to a conversation we might have if you stepped into my office for an initial consultation… without the back and forth.

It’s built to teach you how to listen to your body, nourish it with intention, and finally understand the why behind what works—so you can stop second-guessing and start feeling better.

What you’ll learn:

    • The difference between macronutrients & micronutrients

    • Why quality nutrients from real food matter more than calories

    • How digestion works—from stomach to small & large intestines

    • What leaky gut is and how it leads to food intolerances & autoimmune conditions

FAQ 🤨

  • Not at all. This course focuses on nutrient quality over numbers. You'll learn how to eat in a way that nourishes your body with real, whole foods that support digestion, hormone balance, and long-term health—without obsessing over calories.

  • Yes, but the quality and timing matter. We recommend organic, mold-tested coffee and pairing it with food (not drinking it on an empty stomach). This helps stabilize cortisol and support blood sugar balance throughout the day.

  • Not necessarily. The goal is progress, not perfection. We focus on minimizing inflammatory, ultra-processed ingredients and upgrading everyday choices. Occasional indulgences are okay—this is a lifestyle, not a diet.

  • Absolutely. Reducing inflammation, healing the gut, and stabilizing blood sugar are foundational for hormone and immune health. Many people report improvements in energy, cycles, skin, mood, and even autoimmune flare-ups.

  • We explore how gluten and conventional dairy can affect inflammation and gut health. While we don’t require everyone to eliminate them, we recommend trying more nourishing alternatives and tuning in to how your body responds.

  • Because they’re one of the best indicators of overall health! Digestion and elimination reveal how well your body is absorbing nutrients and getting rid of waste. You’ll learn what’s normal and how to support healthy digestion daily.

  • Some people feel better in just a few days—more energy, better sleep, less bloating. For others, it takes a few weeks of consistency. This course gives you the tools to build sustainable habits, not quick fixes.

  • Yes—this course is especially helpful for people on GLP-1 medications.

GLP-1s can be powerful tools for weight loss and blood sugar management, but they don’t replace the need for quality nutrition, gut health, and sustainable habits. In fact, many people on these medications experience side effects like nausea, fatigue, or constipation—often due to poor digestion or low nutrient intake.
